Cute little meringue ghosts for Halloween! Get the kids to make some meringue mixture and decorate it to look like ghosts. Since these are quite small you don’t need to make too much meringue to get a good batch of them.
egg whites (2)
caster sugar (100g)
black food colouring
Separate 2 eggs and place the whites into a clean, dry bowl.
Whisk the egg whites for a couple of minutes until stiff and peaky
Add half the sugar and beat until the meringue is shiny and stands in stiff peaks
Add the rest of the sugar and beat again until the mixture is very stiff and silky looking
Place baking parchment on a tray and let the kids pipe or dollop about 1 tablespoon of mixture onto the tray, swirling at the top like a ghost head
Bake in the oven at 100C for 1 hour, then turn off the oven and allow the meringues to dry out in the cooling oven for about 3/4 – 1 hour
Once cooled, let the kids add faces to the meringue ghosts with the black food colouring – try dipping a cocktail stick into the colour and then painting on the faces. Don’t worry about the faces looking perfect – scary meringue ghosts with lopsided eyes are fine; it is for Halloween so the more scary looking the better!
